Yorkshire pudding
1 aubergine, diced
2 courgettes, diced
2 red onions, diced
2 red peppers, diced
20 capers
20 black olives
10 tbsp balsamic vinegar
 

heat oven to 200C

Place all the vegetables onto a baking tray and mix with olive oil.

Bake for 40 minutes.

Drizzle with the balsamic and serve
