500g cooking apples, peeled, cored and coarsely grated
150g blanched almonds, roughly chopped
75g walnuts, roughly chopped
450g light brown Muscovado sugar
1 tsp ground ginger
1 1/2 tsp cinnamon
1 tsp nutmeg
1/2 tsp ground cloves
1 lemon, zest & juice
1 orange, zest & juice
200g mixed peel, chopped
250g unsalted butter, melted
200ml dark rum & 275ml dry sherry or
400ml brandy
