Game season is here at last. Definitely my favourite
time of year.
Game is one of the bargains of the culinary world, and
certainly ticks the box regarding being ethically reared. It's unfortunate
that in this country game is not a popular as it should be. Wild food has
so many benefits: it is healthy, sustainable, environmentally
friendly. It is lower in fat and cholesterol than many other red meats and
is a good source of protein and vitamins. It is superior in taste to
almost any farmed meat. People in continental Europe realise this. The
bulk of game birds shot in this country are exported there. It's time we
kept more here. And that means consuming more.
Grouse has been shot since August, but rarely available
around MK. It can be obtained in London if you can afford it - it's by far
the most expensive of the game birds - and it certainly isn't for the
first time game eater. It has a very strong gamey flavour, albeit one I
love.
Although rabbit and pigeon don't have a shooting season,
it's at this time of year when they are most abundant.
The hare and partridge season started in September and
these are now readily available.
Pheasant season started at the beginning of October and
should be making it to suppliers soon.
Although available in some local supermarkets, prices
tend to be rather inflated. See Ingredients

It is time to
dispel the myth that game is too strong tasting and too flavoursome for
most palates. These are historical traits that arose from days before
refrigeration when strong flavours were the norm. I like to cook game in a
modern manner. Less hanging and sympathetic cooking produce a result that
everyone can enjoy. Think rabbit and pigeon for dinner!. And please - no
bread sauce.....
And, unlike much supermarket meat, these animals have
had a more natural life and been killed almost instantly. No stress of
waiting in line at the slaughter house.
