Memories of school dinners. But updated. This is not a pudding for the faint-hearted or those on a diet. Made from suet, flour and dried fruit it is high in calories. It is, however, the perfect pudding for a treat on a cold winter's day.

300g plain flour
2 tsp baking powder
150g shredded suet
75g caster sugar
80g currants
100g raisins
1 lemon, zest only
200ml milk
pinch of salt
butter, for greasing the pudding basin

Place the flour, baking powder, shredded suet, caster sugar, currants and lemon zest into a bowl and mix well to combine

Add the milk and stir to make a soft dough

Grease a pudding basin with butter and decant the now fairly solid piece of dough into the basin. Cover with a piece of greaseproof paper and tie around the rim with string to secure the paper.

Place a damp tea towel over the top. tie once more with string to secure the tea towel and tie in a bow over the top

Place the basin into a steamer. Cover with the lid, bring to a boil and simmer for 1 1/2 hours

Serve cut into thick slices with lashings of custard

 

Jenkins: stop sniggering at the back, boy! As we all should know, the 'spotted' part refers to the raisins and currants in the dough and the word 'dick' is a colloquial word for pudding.
